Serves: 3-4 sandwiches
INGREDIENTS
1 small sized broccoli
1/2 cup grated processed cheese
1/4 cup boiled corn
salt and pepper to taste
1/2 tsp oregano or mixed herb
1/2 tsp garlic powder
6-8 bread slices
1/4 cup processed cheese
butter for browning
METHOD
Boil water in pan, let it boil. Remove the florets of broccoli from stem and drop in hot boiling water. Boil on high flame for just 2 minutes, drain the water and run broccoli under room temperature water and immediately transfer in ice-cold water. Stain broccoli and mince it very fine using food processor or blender.
Take a bowl, add blanched processed broccoli, grated cheese, boiled corn, salt, pepper, oregano and garlic powder.
Give a good mix.
Take bread slices, spread cheese on each slice, applying cheese over slices is important as it not only enhances the flavor but helps the filling to get stick, without cheese spread filling will come out.
Keep a spoonful of filling and cover with other slice. Apply butter on bread slice, toast it and apply butter on the top side, flip and press hard with spatula to get crisp sandwich.
Cut into triangular shape and serve.
Don't omit processed cheese in filling, specially, if preparing for kids, as cheese suppress the flavor and taste of broccoli as many kids don't like broccoli.
Adding cheese slice makes it super yum specially kids love the melting cheese coming in mouth.

8. Cover with other slice and spread softened butter on top.
9. Grill on high flame on gas top or toast in sandwich maker.
10. Flip and toast on the other side if using grill pan.
